Snow Peas Stir Fry | Fast and Easy Recipe
Snow Peas are in season, so I went to Whittamore’s Farm to pick some. I decided to prepare a snow peas stir fry and served it over rice with some roasted potatoes on the side. This is a fast and easy recipe.

Snow Peas are in season, so I went to the local farm to pick some. I decided to prepare a snow peas stir-fry and served it over rice with some roasted potatoes on the side. This is a fast and easy recipe.
Ingredients
Stir-Fry

- 1 cup snow peas (cut in an angle)
- 1 red pepper (cubed)
- 1 yellow pepper (cubed)
- 1 green pepper (cubed)
- 1 red onion (cubed)
- 2 cloves of garlic (chopped finely)
- ½ tsp of ginger (optional)
- ½ tsp of salt (or to taste)
- ½ tsp of pepper (or to taste)
- ¼ cup of soy sauce
- 2 tbsp of vegetable oil
- 2 cups of mini potatos (cut in half)
- 1 tbsp of vegetable oil
- ½ tsp of salt (to taste)
- ½ tsp of pepper (to taste)
Instructions
Roasted Potatoes
- Pre-heat oven to 425 degrees Celcius
- Place par-boiled potatoes in bowl
- Add all ingredients and mixed by hand
- Spread potatoes on non-stick cookie sheet with cut side facing up
- Place cookie sheet on bottom rack of oven
- Turn over potatoes after 5 minutes
- Cook for 5 more minutes
Stir-Fry
- Put vegetable oil in frying pan
- Add garlic and onions and let cook until onions are browned
- Add remainder of indredients
- Cook for 2-3 minutes (keep veggies crisp. Do not overcook)
- Serve on top of rice
