Snow Peas are in season, so I went to the local farm to pick some. I decided to prepare a snow peas stir-fry and served it over rice with some roasted potatoes on the side. This is a fast and easy recipe.

  • 1 cup snow peas (cut in an angle)
  • 1 red pepper (cubed)
  • 1 yellow pepper (cubed)
  • 1 green pepper (cubed)
  • 1 red onion (cubed)
  • 2 cloves of garlic (chopped finely)
  • ½ tsp of ginger (optional)
  • ½ tsp of salt (or to taste)
  • ½ tsp of pepper (or to taste)
  • ¼ cup of soy sauce
  • 2 tbsp of vegetable oil
Roasted PotatosSnow Peas Stir-Fry | Fast and Easy Recipe
  • 2 cups of mini potatos (cut in half)
  • 1 tbsp of vegetable oil
  • ½ tsp of salt (to taste)
  • ½ tsp of pepper (to taste)
Roasted Potatoes
  1. Pre-heat oven to 425 degrees Celcius
  2. Place par-boiled potatoes in bowl
  3. Add all ingredients and mixed by hand
  4. Spread potatoes on non-stick cookie sheet with cut side facing up
  5. Place cookie sheet on bottom rack of oven
  6. Turn over potatoes after 5 minutes
  7. Cook for 5 more minutes
  1. Put vegetable oil in frying pan
  2. Add garlic and onions and let cook until onions are browned
  3. Add remainder of indredients
  4. Cook for 2-3 minutes (keep veggies crisp. Do not overcook)
  5. Serve on top of rice
